Monday September 14, Basic Pastry Techniques: Learn some of the basic techniques used in pastry! Chef Dalo will show you how to make pastry cream,sugar dough, fruit tarts, eclairs, and sugar cookies! 6:30-9pm $100 Monday September 21, Tapas: learn to make spanish tapas to entertain on that special day, cumin coated shrimp, fried saffron rissotto, chorizo and kalamata empanadas, vegetable and cilantro strudal, potato and ham croquettes, mollocran pizza, spicy fish cakes with mango chutney, chicken and garlic quice.6:30-9pm $ 80 Monday September 28, Breads: Learn to make Foccacio, Bagguettes, 7 grain whole wheat, and Soft rolls! Also learn all about sours and the chemisty behind yeast and how to make it work for you. 6:30-9pm $80
Monday October 5, An Appetizing Affair: Ahi tar-tar with a wasabi aioli, shrimp and scallops with a mango raspberry cilantro relish, steamed garlic clams over spinach pasta and Italian chili, wrapped brie in phyllo with apples and walnuts, wild mushroom quiche served over mixed greens, crab filled crepes with roasted red pepper remulade. 6:30-9pm $100
Monday October 12, Pasta and Rissotto: Make Pasta from Scratch! spinach pasta, tomato pasta, tortellinis, raviollis, dual colored pastas and make the perfect rissotto just like they do in Italy.6:30-9pm $80
Monday October 19, Hor D" Oeuvres: Learn to make a variety of Hor D' Oeuvres including salmon gravlox on toast, shrimp and green chili pesto, basic shushi and California rolls, bacon wrapped scallops, perciutto wrapped asparagus, cheese staws, sesame tuna on cucumber, dried figs stuffed with cranberry goat cheese, mini quesadillas and salsa, Jalapeno humus and toasted pita. 6:30-9pm $100
Monday October 26, Intermediate Cake Decorating: Learn trick of the trade as Chef dalo teaches you how to fill, pipe, ice and finish cakes. You will learn different types of piping techniques, how to ice in buttercream and wrap in fondant. Also how to make fondant bows, flowers, ect... then you get to take your masterpiece home for your family to enjoy! 6:30-9pm $95 Monday November 2, Holiday Baking: learn how to make some classic desserts like sweet potato tart, caramalized cranberry orange tart, chocolate ginger mousse cake, and a Bouche Noel (yule log) 6:30-9pm $100 Monday November 9, Holiday Cookies and Candy: Learn how to make assorted hoilday cookies, and truffles using fine Belgian chocolate, and buttery toffee with chocolate coating. Great for holiday gifts or for that office party. 6:30-9pm $100 Don't Forget Gingerbread House Building Workshop Starts Sunday November 22, Great for Birthday Parties and Boy and Girl Scout Troop Meetings. Please note that in order for each class to take place, there must be a minimum of four (4) students signed up. So get your friends to join in on the fun!
